For the Crust:
- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 oz brie cheese, sliced into small pieces
- 1/3 cup dried cranberries
- 1/3 cup pecans, roughly chopped
- 2 tablespoons maple syrup (optional, for drizzling)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Bake for 15 minutes, then flip the rounds and bake for another 10-15 minutes until tender and lightly browned.
- Remove from oven and top each round with a piece of brie cheese. Return to oven for 2-3 minutes until brie is slightly melted.
- Top with dried cranberries and chopped pecans. Drizzle with maple syrup if desired. Serve warm.
Notes
You can customize the seasonings to taste. Add a sprinkle of fresh thyme or rosemary for extra flavor. For a vegan version, omit the brie or use a plant-based cheese alternative.
