A delightful appetizer featuring creamy whipped brie on crispy crostini, topped with sweet roasted strawberries and a crunchy honey-almond topping.

For the Crust:
- 1 wheel Brie cheese (8–10 oz), rind removed and cubed
- 4 oz cream cheese, softened
- 2 tablespoons whole milk or heavy cream
- 1 French baguette, sliced into 1/2-inch rounds
- Olive oil, for brushing
- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons honey, divided
- 1/4 cup sliced almonds
- 1 tablespoon butter
- 1/4 teaspoon sea salt
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Place baguette slices on a baking sheet, brush lightly with olive oil, and toast for 5-7 minutes until golden.
- On a separate baking sheet, toss strawberries with 1 tablespoon honey. Roast for 10-12 minutes until softened and slightly caramelized.
- In a small skillet over medium heat, melt butter with remaining 1 tablespoon honey. Add almonds and salt, stirring constantly for 2-3 minutes until golden and crunchy. Transfer to a plate to cool.
- In a food processor, combine cubed brie, cream cheese, and milk. Process until smooth and whipped, about 1 minute.
- Spread whipped brie on each crostini. Top with roasted strawberries and sprinkle with honey almond crunch. Serve immediately.
Notes
You can customize the seasonings to taste. For a sweeter version, add a drizzle of balsamic glaze.
